Recipe: “Easter Salad”

I made dinner today, and tried out a new salad. I served it with Homemade Veggie Burgers in wholegrain burger bread. Perfect for a sunny day right after easter! And no, there’s no chocolate eggs or marzipan bunnies in the salad, The main “easter thing” is the orange that’s in it. The recipe can of course be made with other vegetable or fruits.

Easter Salad:

Ingredients (salad):

1 apple

1/2 green squash

1 orange

2 shallots (spring unions)

1 pack precut salad mix (or cut and mix yourself. The mix is mostly so you don’t need to buy five different types of salad.)

Ingredients (dressing):

2 tbsp apple cider vinegar

2 tsp liquid honey

1 boat garlic

4 tbsp olive oil

red currypaste (I used 1 tsp)

What you do:

1. Mix vinegar and honey for the dressing. Squeeze in garlic and pour into the oil while you stir. Use currypaste to get the taste you like.

2. Cut the apple and the squash in dices, the shallots in slivers. Peel the orange and cut it into dices. Mix all these with the salad. Pour the dressing ontop, or serve it seperatly.

This recipe give 2-4 portions, depending on the use. Use it as a side dish for dinner, or put E.G peanuts in it to have it for lunch with some bread at the side. Also perfect at this summer’s barbeques!
